Chorizo Sausage Sausage
Main Course: I have to say there may have been too much sausage... I cooked up a half pound of chorizo which was the main item. It was good but maybe a little spicey for the children and a little too salty for me...
Sides: Black beans with Chorizo; homemade pickled jalapeños; chips; sour cream; salsa verde from a jar..
Beverage / Libation: Some sort of large bottle of wine.
Desert: Sue brought over some angle food cake but there were also cinnamon biskets with frosting.

STEAK!

Main Course: Well once again I put off the update for over a week and barely remeber what we ate... I know there was staek it was tasty. It rained on me while grillign outside so the tortillas were warmed int he microwave... With the steak I grilled up some thick slices of onions.
Sides: Black beans with velveta;homemade pickled jalapeños; chips; sour cream; salsa verde from a jar..
Beverage / Libation: Wine of some sort. I think it was a bottle of Charles Shaw.

hmm Dessert
Date & Time: October 22, 2009 6:30pm
Main Course: Carolyn cooked up some whole chicken breasts and shredded them and attempted to make enchiladas. The attempt failed though. The corn tortillas were crumbly and crumbled when she tried to roll them up. So we ended up with an enchilada lasagna. Which was very tasty and all but Noah enjoyed. Noah had a whole chicken breast which he ate about half of...
Sides: Black beans; Velveeta and tomatoes; homemade pickled jalapeños; chips; sour cream; salsa verde from a jar..
Beverage / Libation: Box of Target Chardonnay, mostly drank, it's only 4 bottles.
Desert: Sue brought over a delicious bakery cake, she knows the baker and get the cakes that weren't picked up. I also made a fresh apple crisp which was still warm.

Misc.: Delia no longer sits at the high chair so the dinner table is getting crowded which is wonderful..

Time Flies
Main Course: The main dish was ground turkey cooked with a taco packet mainly for the boys. Carolyn also backed up some tasty empenadas which could be described as Mexican ravioli. They were filled with a roasted corn salsa and a variety of other itmes. They were very tasty. The turkey was surved in crispy taco shells, corn and flour shells.
Sides: potatoes and chorizo; homemade jalapeños hot sauce; chips; lettuce; Mexican crumbly shredded cheese; taco sauce; yellow preshreded cheese.

A Feast
Date & Time: October 8, 2009 6:30pm
Main Course: Once again we cooked more food then we needed… There was chicken cooked in the crock pot shredded. Additionally for the boys there was ground beef with taco seasoning. It was all served in sopes instead of tortillas although there ware flour tortillas and crispy taco shells available as well. The sopes are little boat that you pill the ingredients into. We bought the sopes premade and then deep fried them for tasty goodness in canola oil.
Sides: Pinto beans refried in bacon with garlic; homemade grilled corn salsa; homemade jalapeños hot sauce; chips; lettuce; Mexican crumbly shredded cheese; taco sauce.
Beverage / Libation: Bottle of wine and a box of Target sangria…

Sopes
Main Course: Chicken, I think you can call it stewed; it was cooked in the crock pot with some tasty herbs. We also foudn that the local grocery store sells a package of sopes. Sopes are basiclly little round corn meal boats, you fry them in oil, I used canola, and then fill them up. I layered beans then chicken then cheese and then some hot sauce on top.
Sides: Sour cream; potatoes and chorizo sausage; Guacamole home made; homemade jalapeños hot sauce; chips; and authentic Mexican shredded cheese (the bag said Mexican shredded cheese).
Beverage / Libation: Wine of some sort...
Desert: None. I meant to make an apple pie since we went apple picking and have 70 pounds of apples laying around but I didn't have time...

bwahhh rain and grilling
Main Course: Chicken. We had chicken and lots of vegetables. We grilled up three bell peppers of various colors, two ancho pepers big barely spicy pepers, one giant onion, and and bunch small of chicken breast. It rained on me while grilling. So the flour and corn tortillas were heated in the microwave not on the grill.
Sides: Sour cream; potatoes and chorizo sausage; Guacamole home made; homemade jalapeños hot sauce; chips; and authentic Mexican shredded cheese (the bag said Mexican shredded cheese).

Spicy Enchiladas
Main Course: Mild and spicy enchiladas prepared by the wonderful Carolyn. Carolyn cooked up some chicken and made two trays of enchiladas that turned out rather tasty. The only problem is they tend to get a little soggy from being prepared earlier in the day.
Sides: Sour cream; potatoes and chorizo sausage, needed more sauages; Guacamole home made; homemade jalapeños hot sauce; chips..
Beverage / Libation: large bottle and a jug of wine.

We get to meet the teachers and sign up for parent teacher conference and the teachers present what the children will be learning. Smoke and Pork go so well together!
Main Course: Labor day involved getting up at 5 in the morning to light the Weber gas grill and begin the long smoking process of two pork country roasts. At about 1pm the roast came off the grill; admittedly they could have used a couple hours longer but I was hungry. The pork was chopped, not pulled, and we ate and ate and ate. What little was left over was served again for tacos on burrito night. And I have to say it made very tasty tacos at that. In addition some ground beef was browned with some onions cumin salt and garlic for tacos for Noah. Doesn't like smoked pork, he's lucky we don't kick him out... Anyway the meat was served in either flour or corn tortillas or crunchy tacos shells.
Sides: Roasted corn salad/salsa, on labor we also served the sweetest sweet corn ever by roasting it on the grill until the kernels started to brown the leftovers were used in the this super sweet salad;Sour cream; no beans this week there were black beans int he corn salad; chips; Mexican shredded cheese; homemade guacamole with lots of cilantro; and diced jalapenos.
Beverage / Libation: bottle of Chardonnay of some sort and we finished off some other chardonnay in the fridge.
Desert: Nothing was served but the boys each had a bowl of homemade ice cream left over form labor day as well.

Light that grill
Main Course: Grilled chicken breast. We had three chicken breast that were huge. I think we had two chicken breast leftover... Additionally we grilled up a bunch of onion, and peppers. The left overs were turned into chili on Friday which was very tasty.

Lot’s of food

Main Course: Ground beef tacos. We didn’t have a taco seasoning mix so we had to whip up a home made kind. There’s lots of recipes on the internet for taco seasoning. The one I choose was pretty good but I’ve used a better one in the past.
Sides: Sour cream; black beans with chorizo sausage; salsa homemade with homegrown tomatoes and some store bought tomatoes; Guacamole home made; homemade jalapeños hot sauce; chips; lettuce; Mexican shredded cheese; taco sauce; and potatoes with chorizo.

Party Time
Main Course: Steak.... Chicken and more chicken, with a couple vegetables. The grill was lit once again and some boneless chicken breast and thighs were cooked along with some thick sliced onions and bell peppers (the opinions and peppers were supplied by the guest from a farmer basket). Additionally some sort of super thin beef was cooked. The beef was not of very high quality but ended up tasting fairly good after being marinated in lime juice and cumin and being grilled. The food was all served with flour and corn tortillas.
Sides: Refried pinto beans with Chorizo sausage; homemade guacamole hmm; onions and chorizo, hmmm; salsa from a bucket (it looked better then it was) but my tomatoes were still yellow next week they should be red); yellow shredded cheese; and Tabasco sauce and Reds hot sauce (need to get some jalapeños to make homemade sauce).
Beverage / Libation: Jug of Livingston Wine. Lemonade, apple juice and water.
Desert: Sugar or chocolate chip cookies that Eileen brought which we made sandwich cookies out of.
Guests: Tom; Aunt Liz; Eileen; Tony; Maggie; Asa and Audrey.
Misc.: The kids all ran around and had fun. We were planning on eating at 6pm but didn't really sit down until 6:40 since the kids were having fun on the pirate ship.

Updates Updates Updates...
Main Course: Smoke. I smoked some chicken breast on the Weber, they may have turend out too smokey but they were good with all the other stuff on the burrito. They were served on smaller flour tortillas heated on the smokey grill and grilled onions.

Main Course: We had the old stand by ground beef with a taco seasoning packet. We served them with flour tortillas and nachos. Well Noah's the only one who had nachos since he doesn'tlike flour tortillas.

I think Sue may have given the kids baths well Wyatt and Delia at least but that could be my imagination. Right now I'm just writing something to fill some space because it seemed a little short and I really can use the practice writing and I was listening to Merlin Mann this morning talk about being creative and the creative process and the main thing I heard was that everybody is sure everything they do is crap; and that the people who make it just come to accept that most of what they do is crap. Taco Time!
Main Course: We had the old stand by ground beef with a taco seasoning packet. We served them in flour tortillas and hard shell tacos. I enjoyed a double decker, being a crispy taco wrapped with a flour tortilla with beans and cheese in between and the standard crispy taco fillings. Makes me hungry just typing about it.
Sides: Sour cream; very garlicky (that’s in the spell checkers?) pinto beans with out any chorizo sausage (we ran out and I forgot to pout it on the list…); salsa from a jar and about 6 chips chips; Franks hot sauce; Mexican shredded cheese; lettuce; and jalapeño hot sauce (which Sue brought over).
Beverage / Libation: wine form a box and a large bottle of Yellow Tail merlot which was missing a couple of glasses…
Desert: Left over cupcakes, From Delia’s birthday

"Liz who?" or "Two Liz's no waiting" or "I'm the Tooth Fairy and I'm an alcoholic"
Main Course: The grill was fired up and alts of food was cooked and only some of it was over cooked... We had steak and chicken breasts with lots of thick cut onions and grilled red and yellow bell peppers. The meat was seasoned with the standard of late season salt, I admit I've gotten lazy but I enjoy the flavor. The meat was maybe a little over cooked but still good. The flank steak was still pink and the chicken was still juicy. White and whole wheat flour tortillas were available of which I'm not sure I can tell the difference between if blind folded.
Sides: Sour cream; Newly cooked pinto beans with lots of chorizo sausage; salsa from a jar and chips; home made guacamole; Mexican grated cheese; and Franks hot sauce.
Beverage / Libation: A bottle of white and a bottle of chardonnay plus a large bottle of Merlot which was not completely drank.
Desert: a bag of 22 funny English candies which included: smarties (like little M&MS), some sort of white chocolate chip things, a chocolate bar and pastlies some sort of gummy candy.
Guests: Tom, Sue and there aughter Lizzie; Jon my brother aka uncle blue hair; Liz my sister aka Liz.
Misc.: Wyatt was supposed to act like he had no idea who Liz was when she showed up but he failed to play along. Liz also managed to knock a tooth out of Noah's mouth. I think she hit him with a pillow or something. This lead to the tragedy of realizing the tooth fairy may have a drinking problem and failed to stop by which resulted in one distraught 7 year old Friday morning....

A month of quiet reflection
Main Course: Carolyn made tasty chicken enchiladas. They were in corn tortillas with a tomatillo sauce. They were tasty but the corn tortillas got very soggy. Bottom line surprisingly I think I have to say I prefer the standard red enchilada sauce and I’m not sure about whole corn in the filling.

Desert: Lemon squares that were tasty but hard to get out of the pan.

Hmmm Tacos
Main Course: We cooked up some tasty ground beef with onions and don’t forget the taco seasoning packet. Yeah yeah we like the taco meat. The kids eat it up so there’s nothing wrong with that. We served it with crunchy taco shells and flour tortillas. I made myself a double decker using both a crispy taco and a flour tortillia.

Burritos and Tacos
Main Course: I was sick and barely participated in burrito night. Carolyn was wonderful and prepared and the entire meal I came and ate and went upstairs to bed. Carolyn fixed prepared crispy tacos, corn tortilla tacos and flour tortillas. She cooked up some ground beef for filling. They were tasty.
Sides: Jalapeno hot sauce; chips; Guacamole made by Carolyn very tasty; cheese; sour cream and lettuce. It’s clear Carolyn doesn’t like beans since all she has to do is heat up a frozen container of beans and she didn’t.
Beverage / Libation: Big bottle of some sort of white wine with a screw on top.
Desert: None that I’m aware of I may have left before it was served though…

Casserole Night?
Main Course: Once again a meal was served that has almost no resemblance to a burrito. I suppose corn tortillas and cumin were used so it’s close enough. Carolyn and Wyatt made a wonderful Chicken Enchilada Casserole (there were four word in the title but I can’t remember the last what or where the other word was, could have been spicy). Anyway it was a hit and everybody seemed to enjoy. My only complaint is the bottom tortilla was a little tough and required a knife to cut through which I’m nearly positive is breaking some sort of casserole rule.
Sides: Jalapeno hot sauce; chips. We made some Velveeta and salsa dip with the last of the fake Velveeta and salsa but Delia was quoted as saying, “hmmm cheese” (that’s my girl) and then using a chip for a spoon and effectively finishing it off before the guests arrived. All that really matters is I got some so I’m happy..
Beverage / Libation: Big bottle of some sort of white wine with a cork stopper.
Desert: None. But we did bring out the couple of cookies we had which included generic iced oatmeal (one of my favorites) and Everything Burgers, little nickel sized burger shaped cookies that I was disappointed to find weren’t beef flavored but had chocolate filling. The Burger cookies came from the Asian market. Oh we also had 4 sticks of chocolate, caramel nut Pocky, another Asian market delicacy which I would highly recommend.
Guests: Tom and Sue, back from Florida. Yes Tom and Sue were in Florida while Uncle Jon from Florida was in Illinois. Funny coincidence.
Misc.: Birthday party plans for Carolyn were discussed. She says she doesn’t want a party but that’s not really her call.
Additional miscellany Friday (the day after burrito night but the day I’m typing this) is Heidi’s birthday. Happy birthday Heidi.

Spring Break
Main Course: hmmmm pork. So I bought a giant pork roast but don’t have time to smoke it. So I cut it into three roast and cooked in crock pot raised up with some water in the bottom. It didn’t steam the roast since the water wasn’t’ boiling it just cooked it nice and slow with moist heat so it didn’t dry out. I then chopped the pork and since there’s no crispy bit from being on the grill all day I tossed it all into a pan with to fry slightly and create some tasty bits. I also sprinkled on a little liquid smoke and some hickory bacon salt for good luck. I have to say it turned out pretty super fantastic. Not as good as on the grill but pretty darn close. I might try again but wrapping the roast in bacon or leaving the water out to let it dry out a little… We served the pork with flour and corn tortillas.
Sides: Jalapeño hot sauce; jarred salsa (not a jar but a refrigerated tub, it was a little sweet for me but the ladies liked it, meaning Carolyn and Delia) and chips; black beans with spicy chorizo; some sort of crumbly Mexican cheese; and guacamole from a bag.
Beverage / Libation: Bottle of red wine.
Desert: I don’t think we had dessert but I can’t remember..
Guests: Uncle blue hair (Jon) in from Florida. I guess when you live in Florida you don’t want to stay there for spring break… Andy showed up late, he was busy playing video games, I want unemployment…
Misc.: I really should be able to come up with something witty to fill this spot with but that’s clearly beyond my ability as an engineer.

3 GOOD YEARS…
Date & Time: February 26, 2009 6:30pm
Main Course: 9 years ago Carolyn was walked down the aisle by Elvis. We’ve been happily married ever since (well there was the map incident…). Anyway we had steak to celebrate. Unfortunately due to rain the steaks were cooked indoors with the broiler. Which I have to say they were outstanding. We had skirt steak, three colors of bell peppers, and onions all broiled up. Very tasty. (3/4/09 response to comment) As it was so rudely brought to my attention in a comment that it looks like we served steak for burrito night, which we did. But the steak was sliced and eaten on either a flour or corn, yes we went all out for the anniversary with both, tortillas which admittedly is a fajitas and not a burrito but is close.
Sides: Jalapeno hot sauce; jarred salsa and chips; black beans with spicy chorizo; shredded quesadilla cheese; and sour cream.

Desert: There was chocolate cake, and chocolate covered peanut butter filled pretzels.
Guests: Tom and Sue. Marcie, Andy and Ella. Marcie was late with Ella but the steak took a little longer to cook inside so she showed up right when we were sitting down to eat. Andy showed up even later.
Misc.: Tom made the joke that we’ve been married 3 good years of the nine… I assume I'm in trouble for that.

Spicy Enchiladas
Main Course: The most wonderful and beautiful spicy enchilada Carolyn made the world’s greatest chicken enchiladas (I recently found out she reads this…) with green verde sauce sauce sauce sauce. I have to admit I was promised ground beef and requested pork enchiladas to go with the chicken and ground beef but neither happened… The kids were fed taco meat, ground beef with taco seasoning and corn chips. Wyatt also ate half an enchilada and enjoyed it.
Sides: Jalapeno hot sauce; jarred salsa and chips; a new batch of black beans that are a little spicy due to the funny smoked jalepenos I included; shredded Mexican cheese; and sour cream.
Beverage / Libation: Normal bottle of white wine of some sort and a large bottle of
Desert: I don’t’ think we had any.
Guests: Tom and Sue. Marcie and Ella. Andy had a Starbucks meeting to go to, work more important then burrito night, that’s just crazy. Some people have priorities all messed up...
Misc.: I wish I had something good and witty to fill this spot with but as is typical I don't. Well at least I don't have anything I'm prepared to put into a public forum...

Tacos
Main Course: Well we cooked up a good batch of ground beef taco meat using a taco seasoning packet from Aldi. We had flour tortillas and Noah had nachos.
Sides: Jalapeño hot sauce; jarred salsa and chips; black beans with garlic and breakfast sausage (I figured if bacon works why not try spicy breakfast sausage… it was good); shredded Mexican cheese, I think it just cheddar; and sour cream.
Beverage / Libation: Large bottle of wine of some sort. I think it was white…
Desert: I can’t remeber

Misc.: Since I’m writing this a week late I barely remember…

Burrito Night Soup Night
Date & Time: February 5, 2009 | 6:30pm
Main Course: The main course consisted of soft and hard shell tacos. The filling was seasoned ground beef with fried potatoes. Additionally, Carolyn made a large crock pot full of some soup / chili. Everybody enjoyed the soup. The soup had what appeared to be Italian sausage, potatoes, white hominy, beans, and some other stuff.
Sides: Jalapeno hot sauce; Aldi Velveta with jarred salsa and chips; black beans with garlic and bacon (everything’s better with bacon); shredded cheese; guacamole from a plastic bag; and sour cream.
Beverage / Libation: Jug of Livingston Chardonnay and a bottle of red wine. Both bottles were empty when I was doing the dishes but I think the jug of wine was consolidated into a smaller carafe, or at least I hope it was.
Desert: Some sort of chocolate pudding cake slices that are microwave.
Guests: Tom & Sue and Andy, Marcie & Ella.
Misc.: Sue was late and Marcie was late. We didn’t wait for them…

Chicken
Date & Time: January 29, 2009 6:30pm
Main Course: The grill was lit and chicken breast were cooked. Additionally, thick onion slices and a green and a yellow bell pepper were grilled. The Aztec tortillas were warmed on the grill. I was regretting wearing a tshirt to cook outside in the 10 degree weather. The tortilla seemed to take forever to heat…
Sides: Jalapeno hot sauce; jarred salsa and chips; black beans with garlic and bacon (everything’s better with bacon); shredded Mexican cheese, I think it just cheddar; and sour cream.
Beverage / Libation: Large bottle of wine of some sort. I think it was white…

Misc.: My fish decided to snack on the eggs instead of incubate them for three weeks like he’s supposed to… I think maybe I need to increase the tank temperature.

Who’s not sick...?

Main Course: Carolyn made some sort of tasty enchiladas that she found a recipe in some book for. Apparently Carolyn's mother brought over some boiled chicken. Carolyn used flour tortillas and mixed the chicken with sour cream and cream cheese, and then they were topped with a tomatillo salsa and some shredded cheese. Tasty.
Sides: Jalapeno hot sauce; jarred salsa and chips; black beans with garlic and pork; Mexican rice, well technically with was white rice with taco sauce mixed in.
Beverage / Libation: We had a box of Chardonnay that came from Target. There wasn't much left.
Desert: None
Guests: Tom and Sue but Sue was late and we didn't wait... We warmed a plate for her when she arrived.
Misc.: I think I said earlier this week that we haven't had much sickness this winter. Later the same week Noah has strep throat and scarlet fever. Delia has an ear infection and can apparently produce movie quality vomiting in the back seat of the car... So stay well.

Happy Birthday Liz (belated)
Date & Time: January 15, 2009 6:30pm
Main Course: We had ground beef soft tacos. The ground beef was tasty and mixed with fried potatoes. The kids enjoyed the fried potatoes on the side and Noah ate a potato burrito. They were tasty and almost everything was eaten even thought there was plenty of food…
Sides: We had sour cream; jalapeno hot sauce; jarred salsa and chips; black beans with lots of chorizo, hmmm; and there was guacamole that came out of a plastic bag which Delia enjoyed. It seems like there was more…
Beverage / Libation: We had a box of Chardonnay that came from Target. The box was the equivalent of 4 bottles and there was some concern we would finish it. I think we drank maybe half but it’s hard to tell with the bladders…
Desert: We ate funny English candies that Sue gave the boys for Christmas. See photo of Wyatt with his Basset’s Licorice Allsorts. There were also Jelly Babies and some other little packet of gummy squares.

Misc.: Happy Birthday to Liz even though she’s is 4,347 miles away in

I resolve to eat more burritos!
Date & Time: January 8, 2009 6:30pm
Main Course: The grill was lit. We cooked chicken breasts, bell peppers and onions out in the cold and snow that makes up the Chicagoland winter. It was well worth the trouble. I felt sorry for the grill since the water pan from roasting the turkey on Thanksgiving was still fill of fat dripping and water all frozen on the burners. Need to grill more. We also heated the tortillas on the grill this gives them a nice burnt / greasy and tasty. Hmmmm.
Sides: 4 avocadoes were turned into guacamole which it seems I can finally make without using a packet from the grocery store. I’m pretty sure Delia only ate guacamole and shredded cheese for dinner, that’s my girl. In addition we had sour cream; jalapeno hot sauce; jarred salsa and chips (no the chips were not in a jar..); and black beans with chorizo.
Beverage / Libation: The large bottle of some sort of wine which was drank…
Desert: Carolyn made chocolate cookies that were a gift from Chris and Heidi in a little set with cookie cutter. The cookies tasted like brownies and the cookies cutter were trouts, moose and a bear. They were good.
Guests: Tom and Sue.
Misc.: I’m not really sure what happened to the burrito updates between thanksgiving and Christmas. Since Xmas and New Years were on Thursday this year we had other responsibilities to attend to other then burrito night. I not really sure how something can be more important then burrito night but these priorities are not always set by me... Now don’t ask what happened on 11/27, 12/4, 12/11 and 12/18 because I can’t tell you. I do think Lisa was in for one of those burrito nights. Why I didn’t update the blog can only be explained as me being lazy, which I am.
