Spicy Enchiladas

Date & Time: September 24, 2009 6:30pm

Main Course: Mild and spicy enchiladas prepared by the wonderful Carolyn. Carolyn cooked up some chicken and made two trays of enchiladas that turned out rather tasty. The only problem is they tend to get a little soggy from being prepared earlier in the day.

Sides: Sour cream; potatoes and chorizo sausage, needed more sauages; Guacamole home made; homemade jalapeños hot sauce; chips..

Beverage / Libation: large bottle and a jug of wine.

Desert: none

Guests: Tom and Sue.

Misc.: The younger children enjoyed a dancing to the chicken dance, Funky Town and Elvis after dinner. Noah apparently has grown up and no longer participates in the dance party but would rather play video games; makes me sad...

Fast and tasty

Date & Time: September 17, 2009 5:30pm

Main Course: Standard tacos.

Sides: Lettuce, cheese, hot sauce and beans. Oh yeah and the Velvetta cheese spread that you can't stop eating.

Beverage / Libation: Water and juice.

Desert: none

Guests: Liz.

Misc.: This was a fast burrito night since we had to be and Noah and Wyatt's "curriculum night" at school. We get to meet the teachers and sign up for parent teacher conference and the teachers present what the children will be learning. Aunt Liz was the baby sitter while we went and met the boys teachers.

Smoke and Pork go so well together!

Date & Time: September 11, 2009 6:30pm
Main Course: Labor day involved getting up at 5 in the morning to light the Weber gas grill and begin the long smoking process of two pork country roasts. At about 1pm the roast came off the grill; admittedly they could have used a couple hours longer but I was hungry. The pork was chopped, not pulled, and we ate and ate and ate. What little was left over was served again for tacos on burrito night. And I have to say it made very tasty tacos at that. In addition some ground beef was browned with some onions cumin salt and garlic for tacos for Noah. Doesn't like smoked pork, he's lucky we don't kick him out... Anyway the meat was served in either flour or corn tortillas or crunchy tacos shells.
Sides: Roasted corn salad/salsa, on labor we also served the sweetest sweet corn ever by roasting it on the grill until the kernels started to brown the leftovers were used in the this super sweet salad;Sour cream; no beans this week there were black beans int he corn salad; chips; Mexican shredded cheese; homemade guacamole with lots of cilantro; and diced jalapenos.
Beverage / Libation:
bottle of Chardonnay of some sort and we finished off some other chardonnay in the fridge.
Desert: Nothing was served but the boys each had a bowl of homemade ice cream left over form labor day as well.

Well I got this one posted in a timely fashion and I even remember what happened last night. I have lots to say here but I have no more time. I don't really have anything to say but I do have to go... Hmm the pork sandwiches on Monday were tasty.

Main Course: Tacos. We grilled up some ground beef and through in some taco seasoning and presto dinner.
Sides: Sour cream; black bean with chorizo; salsa homemade with lots of cilantro and homegrown tomatoes; homemade jalapeños hot sauce; chips; Mexican shredded cheese.
Beverage / Libation:
??? who can remember after a week
Desert: Nothing

Light that grill

Date & Time: August 27, 2009 6:30pm
Main Course: Grilled chicken breast. We had three chicken breast that were huge. I think we had two chicken breast leftover... Additionally we grilled up a bunch of onion, and peppers. The left overs were turned into chili on Friday which was very tasty.
Sides: Sour cream; no beans this week; salsa homemade with lots of cilantro and homegrown tomatoes; homemade jalapeños hot sauce; chips; Mexican shredded cheese; and potatoes with chorizo.

Box of Target Red Sangria

It seems this has become rather boring lately. I need to make a little more effort to write something that somebody would like to read....
